Artichoke Cheese Dip

Kristen, a lover of crackers, chips, and all crunchy things containing more oil than flour, loves to make this dip. We find that it is a great excuse to ingest crackers and get our daily allotment of cholesterol. And artichokes.
1 15 oz can artichoke hearts
12 oz mozzarella cheese
1 c mayonnaise or sour cream
1 c parmesan cheese
1/2 t minced garlic
1 t chives
1/2 t parsley
1 t lemon juice
Drain and chop artichoke hearts, grate cheeses, chop chives and parsley. Mix all ingredients together in a 5x9 casserole dish or loaf pan. Bake at 325 for 45 minutes. Serve warm with crackers or breads to spread.

Variation: I ate this with spinach also mixed in at a pizza place in Buffalo. It was really good, but we haven't actually tried making it yet. Our suggestion: chop, cook, and drain 5 oz fresh spinach and add to mixture before baking.
