Cowgirl Cookies

These cookies taste better the next day. You should probably visit the bulk food section of your favorite supermarket before you make them or they will end up costing you a bundle. Don't ask why they are called Cowgirl Cookies. We never could figure that out.
2 c shortening 2 c brown sugar
2 c white sugar
4 eggs
4 t vanilla
4 c flour
4 c oats
1 t salt
2 t baking soda
1 c chocolate chips
1 c coconut
1 c coarsely chopped walnuts
1 c raisins
Preheat oven to 350

In a large bowl, cream together shortening and sugars; add eggs and vanilla. In another bowl, mix together the flour, oats, salt and soda. Gradually mix the dry ingredients into the egg mixture. Add the remaining ingredients.

Drop by spoon onto a greased cookie sheet and flatten with a glass or by hand. Bake 12 minutes.
