White Chocolate & Macadamia Nut Cookies

You may wonder what pecans are doing in this recipe, and the truth is that we're not really sure, but it may have something to do with how difficult it is to get sufficient macadamia nuts in the cookies at a reasonable cost. Macadamia nuts are a little hard to track down in bulk, but it's worth it for this very sweet cookie (the packaged nuts are ridiculous). If you can't find them, you can substitute 3/4 c more of the pecans to make a white chocolate and pecan cookie, which is still very good, though not as special.
1/2 c + 2 T butter or margarine
3/4 c brown sugar
1 t vanilla
1 egg
1 c flour 3/4 t baking powder
1/8 t salt
1/8 t baking soda
1 1/2 c white chocolate chips
3/4 c chopped macadamia nuts
3/4 c chopped pecans
Preheat oven to 350.

Cream shortening, sugar and vanilla together. Add egg. Stir in flour, baking powder, salt and baking soda, the white chocolate chips and nuts.

Drop cookie dough by scant 1/4 c measures onto a cookie sheet. These are BIG cookiesÑyou may only get 10 or so per recipe. Bake 15 minutes
