Chicken Breasts with Horseradish

1 lb chicken breasts
salt
black pepper
1 t olive oil
2 t chopped scallions
1/2 t minced garlic

1/2 c bread crumbs
2 t bottled horseradish
1/2 t tarragon
In a small bowl, mix mustard and mayonnaise. Dry chicken, then sprinkle with salt and pepper. Heat oil in skillet on medium-high, and brown chicken for 5 minutes per side. Move chicken to a baking dish SautŽ scallions quickly, add garlic, sautŽ 30 seconds more.

Remove skillet from heat. Stir in bread crumbs, horseradish, tarragon, and more salt and pepper, to taste. Spread mayonnaise mixture on each side of chicken, then dip in bread crumbs.

Cook at 425¡ 10 minutes, or until cooked through. Let stand 5 minutes.
