| Broiled Filet of Sole with Olives | |

This is a recipe my father made up one day. The green olives taste really good when they are toasted (well...burnt). | |
| olive oil 1 lb fresh or frozen (defrosted) filet of sole or other fish 1/3 c bottled Spanish olives, drained 1/2 c croutons or bread crumbs 2 cloves garlic 1 T fresh or frozen parsley, chopped crushed red pepper black pepper salt (optional) | Turn on broiler to medium setting. Place a thin coating of olive oil in the bottom of a 13x9 cake pan. Coat fish filets with the oil and place them in the pan. Cover with rest of ingredients. Broil fish until it turns opaque in the middle and becomes flaky (10-15 minutes). |
