Russian Black Bread

This is a great bread to have with Borscht. To demonstrate our immense egocentrism, we included a breadmaker version. We have a breadmaker, and think you should too. If you don't have one, you have four choices. 1: Run out and buy one. 2: Improvise in the lab by substituting your advisor's centrifuge. 3: Make bread from scratch, using the kneading and rising instructions from any heavy bread recipe and the ingredients from here. 4: (what you'll probably do) Run down to Weg's and buy the blackest thing they have.

1 1/8 c water
2 T cider vinegar
2 1/2 c bread flour
1 c rye flour
1 t salt
2 T butter
2 T dark corn syrup
1 T brown sugar
3 T cocoa powder
1 t instant coffee
1 T caraway seeds
1/4 t fennel seeds
2 t yeast
Makes 1.5 lb loaf.

Put all ingredients in bread maker. Press start.
